Amuse-Bouche

Lobster Sphere – Chilled lobster bisque encapsulated in a delicate gel sphere with citrus foam and micro-herbs

Scallop Carpaccio – Paper-thin raw scallops with yuzu gel, pickled daikon, edible flowers, and matcha dust

Local Crab & Avocado Mille-Feuille – Layers of sweet Tenerife crab, avocado mousse, and compressed cucumber, topped with caviar pearls

Wagyu Beef Fillet – Chargrilled rare with truffle-infused potato espuma, baby heritage carrots, and red wine jus
